Recipe of burrata with truffle
Ingredients for 4 persons :
200g of fresh egg pasta
1 fresh truffle
200g of liquid full cream
Cut the truffle into thin slices using a small mandoline. Put the pieces in a bowl with the cream all day long in the fridge.
Cook the pasta in a large quantity of salted water, a bit less than the cooking time indicated, soak and keep 2 tablespoon of the cooking water, that you will later add to the cream.
Pour the cream in a pan with the cooking water, add butter, salt, pepper and cook the whole mixture over low heat.
Add pasta, let it cook until complete absorption of the cream (but not entirely, some smooth has to remain)
Directly serve in the plate, adding the frayed burrata afterwards handly, then immediately taste.
