Recipe of burrata with chives
Ingredients for 4 persons :
4 burrata which chives
600g of ripe tomatoes, but firm for aspic
Ancient tomatoes from different varieties
2 gelatin sheets
Olive oil – a few sprigs of chives – fine salt – ground pepper
Preparation of the aspic :
Soak the gelatin sheets in cold water. When they are softened, after about 5mns, drain them and melt them over low heat or in a microwave, adding one tablespoon of water.
Rinse tomatoes, soak them and blend them. Filter the juice you obtain. Add gelatin and mix well. Add fine salt. Filter the preparation above four plates, then keep it in the fridge for 2 or 3 hours.
Rinse ancient tomatoes, cut them into slices and put them on the tomato aspic with leaving room in the middle for the burrata.
Drizzle with olive oil, sprinkle with fine salt and chopped chives.
Freshness of tomatoes, sweetness of burrata and the scent of chives make this simple starter a true pleasure in summer!
