Recipe of fresh burrata
Ingredients for 4 persons :
4 100g burrata
800g of zucchini
500g of green asparagus
A packet of multicolored cherry tomato
4 tablespoon of olive oil
1 squirt of lemon juice or balsamic vinegar
Prepare the zucchinis and cut them into long strings using a mandolin or a spiral vegetable slicer.
Cook the asparagus tips in salted boiled water or with steam.
Cut the cherry tomatoes in half.
Take leaves off the basil.
Put the zucchini spaghettis and the tomatoes inside a salad bowl with the basil, the olive oil, a few drops of lemon juice or balsamic vinegar, salt, pepper and stir gently after having added asparagus. Taste, adapt seasoning then place in plates and put on top the melting burrata.
An idea of spring starter, finely seasoned, a true delight.
